Soup
2 lbs ground beef
1/4 cup onion diced
4 oz can chopped green chiles
2 pkg (1oz) taco seasoning mix
16 ozs tomato sauce
28 ozs canned tomatoes diced
14 ozs canned beef broth
10 ozs frozen corn optional
16 ozs Mexican style beans or red kidney beans drained
8 ozs sour cream
1 1/2 cups cheddar cheese grated
corn chips for garnish
Brown ground beef and onions in a Dutch oven and drain well. Add chiles, seasoning mix, tomato sauce and beef broth. Bring to a boil, reduce heat and simmer uncovered for 20 minutes. (Soup may be chilled or frozen at this point.) At least 15 minutes before serving, add corn and beans and heat to serving temperature. Garnish with sour cream, grated cheese and corn chips.
