8 ounces cream cheese softened
1/3 cup ricotta cheese
1 teaspoon lemon juice
1 teaspoon honey
peel from 1/2 lemon finely grated
1/3 cup dried apricots finely chopped
2 tablespoons golden raisins
1 tablespoon water
1 cup chopped pecans or walnuts
1/4 teaspoon powdered ginger
1 tablespoon melted butter
Combine cheeses, juice, honey & grated peel. Beat together until smooth.
Boil apricots, raisins & water to soften fruit. Let cool
Mix fruits with cheese mixture. Chill.
Combine nuts, ginger and melted butter.
Form cheese-fruit mixture into a ball and roll in nut mixture. Wrap in plastic wrap and chill.
Serve at room temperature
