Baked Chicken Salad

Casseroles, Chicken, Luncheon


4 cups cooked chicken cubed

1 cup chopped celery

1 bunch green onion, sliced

1/2 cup toasted sliced almonds

black pepper to taste

juice of 1 lime or lemon

1 cup mayonnaise


potato chips, crushed

cheddar cheese, grated


Mix all but chips and cheese. Place in a sprayed shallow baking dish.

Combine crushed potato chips and grated cheese and spread over the casserole.

Bake at 350 degrees for 30-40 minutes.


Serving Ideas: Serve with canned peaches or cantelope wedges.
