Banana Bread


3/4 cups butter, softened

1 1/2 cups sugar

1 1/2 cups mashed bananas (about 3 bananas)

2 eggs, beaten

1 teaspoon vanilla

2 cups flour, sifted

1 teaspoon baking soda

3/4 teaspoons salt

1/2 cup buttermilk

nuts, optional


Cream sugar and margarine. Add mashed bananas, eggs and vanilla and blend well.
Combine flour, soda and salt. Add to sugar mixture alternately with buttermilk. Stir in nuts, if desired.
Bake in greased 9"x5" loaf pan for 1 to 1 1/4 hours, till toothpick inserted in center comes out clean.
