Beef Enchilada Bake


1 lb lean ground beef

12 oz bag frozen corn

1 Tbs taco seasoning

l/2 lb Velveeta cheese cut into ½" cubes

6 corn tortillas

10 oz can Rotel Tomatoes

4 oz sour cream

shredded cheese cheddar or cojack


Heat oven to 350 degrees. Spray square baking dish with Pam.

Brown meat in large skillet & drain. Stir in taco seasoning, corn, Velveeta, Rotel & sour cream. Heat & stir until cheese is melted & all is combined well.

Spoon ⅓ of the meat mixture into the dish. Cover with 3 tortillas torn in half.
Repeat layers, topping with meat mixture. Cover with shredded cheese.

Bake 30 minutes or until heated through & cheese is melted.
