Black Bean & Chorizo Soup


3 ounces link chorizo

sausage coarsely chopped

1 med onion chopped

1 clove lg garlic finely minced

1/2 green pepper chilled

1/8 teaspoon red pepper flakes

1/2 teaspoon cumin

1/4 teaspoon salt

2 tbsps olive oil

2 1/2 cups chicken broth

2 ounces 15 cans black beans rinsed & drained


Cook all but broth & black beans in oil over moderate heat, stirring, until veggies are softened, about 10 minutes. Add broth & beans and simmer, partially covered, 15 minutes. Lightly mash beans with a potato masher to slightly thicken.


Serving Ideas: May top with dollops of sour cream or float lemon slices.
