Black and Blue Brisket Salad

1 cup crisp croutons

smoked brisket thinly sliced & torn apart

1/4 cup EVOO

2 Tbs balsamic vinegar

1 tsp Dijon mustard

4 cups baby arugula packed

1/2 cup red onion vertically thinly sliced

1/4 cup blue cheese crumbled

cherry tomatoes optional

ripe avocados optional


Combine oil, vinegar & mustard in a large bowl, stirring with a whisk.

Add toasted croutons, brisket, arugula & onion. Toss to coat.

Top evenly with avocado & blue cheese.
