1 cup heavy cream
1 cup vegetable stock
1 cup instant polenta or instant yellow grits
1 cup crumbled bleu cheese
salt and pepper
In a medium saucepan, bring cream and stock to a boil. Rain polenta or grits into liquid stirring constantly. Lower heat, being careful of boiling polenta splattering. Season with salt and pepper. Remove from stove, and blend in blue cheese. Serve.
Notes: If using regular polenta or grits, double the liquid.
