Blue Cheese Topper


2 cups (8 oz) crumbled bleu cheese

1/2 cup chopped red onion

1/4 cup chopped parsley

1/3 cup olive oil

3 tbsps red wine vinegar

2 cloves garlic minced

1 tablespoon coarse black pepper


1. In a 9-inch pie plate, sprinkle the blue cheese in an even layer. Top with the onions and parsley.
2. In a small bowl, combine the remaining ingredients; mix well and pour over the blue cheese mixture.
3. Cover and chill for at least 1 hour before serving.

Serve on green salad, hot burgers or steak, or as-is for a dip. For a lovely appetizer, serve on top of crusty bread or crackers with apple & pear slices.
