Brunch Casserole


6 eggs

2 cups milk

1 can cream of celery soup

1/2 lb cheddar cheese shredded

6 slices Italian or French bread cubed

ham sausage or bacon, any amount cubed or crumbled

1 cup cottage cheese

1/2 cup green pepper diced

1 jar sm pimento optional

sliced mushrooms optional

Salsa Suprema or other salsa


Place bread cubes in greased 9"x13" baking dish. Sprinkle cheese, meat, pepper, pimento, & mushrooms over all. Combine eggs, milk, cottage cheese & soup and pour evenly over all. Cover with plastic wrap and refrigerate overnight.
Bake at 325 degrees for 1 hour. Serve with salsa on the side.


Notes: Make the night before serving & refrigerate till 1 hour before serving.
Serving Ideas: Serve with fresh fruit and sweet, sticky cinnamon buns.
