Bruschetta with Tomato, Basil & Goat Cheese


1 slim mini baguette sliced 1/2" thick

2 cloves lg garlic halved

3 Roma tomatoes finely chopped

1 roll chevre cheese

10 leaves fresh basil

kosher salt

extra virgin olive oil optional


Preheat oven to 400 degrees. Place bread slices on cookie sheet, and bake for 15 minutes, or until crispy. Rub each toast with cut side of garlic. Drizzle with a little extra virgin olive oil if desired. Remove to serving plate.

Chop tomatoes and place in a small bowl. Stack fresh basil leaves on top of one another and roll into a log. Thinly slice basil into green confetti and loosely combine with tomatoes. Add chevre cheese and stir till mixed a bit. Place bowl in center of bread plate.

To serve, spoon a scoop of basil-tomato-cheese mixture on toasted bread.
