Cabella's Chicken on a Rack


2 (3-5 lbs each) whole Smart Chickens

fresh herb stems (thyme, tarragon, basil, oregano, etc)

2 lemons quartered

garlic powder

any other seasonings of choice

Olive oil


Wash & dry chickens. Remove & discard any dangling fat or skin.
Place fresh herbs & 2 lemon quarters inside each chicken.
Rub entire chicken skin lightly with oil. Sprinkle seasonings inside & over all & pat/rub in.

Preheat gas grill for Indirect/Medium cooking.

Spray Cabella's racks with Pam & place on large tray or pan. Mount prepared chickens on the racks, tucking legs & balancing as much as possible. Use skewers if wings stick out. Place on cooking grate over indirect heat, close lid, and cook for about 90 minutes without opening lid. Thermometer should reach 180 degrees F.

Remove from heat while still on the racks & let stand for 5-10 minutes before removing from racks.
