Cacci's Italian Soup


2 cans onion soup

1 can minestrone soup

28 ozcan Italian tomatoes cut up

1 1/2 cups water

1 qt chicken broth

1/4 lb hard salami sliced & cut up

1/2 lb spaghetti broken or other pasta

parmesan cheese grated


Heat all together (except spaghetti, salami & cheese) in crockpot or on stove. Simmer 6 hours in crockpot, or 1 hour on stove. Add pasta & salami in time to cook before serving. Serve with cheese to sprinkle on.


Notes: Good for a crowd in winter -- add more pasta for a heartier soup or more servings. Try a variety of pasta shapes.

Serving Ideas: Serve with fresh veggies and crusty rolls.
