Carrot Cake


3 cups sifted flour

2 teaspoons baking soda

2 teaspoons cinnamon

1/2 teaspoon salt

1 1/2 cups oil

2 teaspoons vanilla

2 cups sugar

2 cups finely grated raw carrots

1 can small crushed pineapple

1 1/2 cups chopped pecans

3 eggs


Preheat oven to 350 degrees. Grease and flour 10" tube pan.
Sift together flour, soda, cinnamon & salt. Mix together oil and sugar. Add half the sifted dry ingredients and mix well. Beat in carrots, pineapple, vanilla and nuts. Add remaining dry ingredients and beat till well-blended. Add eggs, one at a time, beating well after each addition.
Bake for 1 hour 10 minutes.
