Ceviche

Ingredients

1 lb bay scallops or quartered sea scallops

1/2 lb shrimp

1/2 cup white wine

1 1/2 cups fresh lime juice separated

1/2 cup fresh orange juice

6 green onions sliced

1/2 yellow bell pepper chopped

1/2 red bell pepper chopped

1 mild green chile chopped

4 tbsps cilantro minced

1/2 teaspoon oregano

1/2 cup olive oil

1 teaspoon salt

freshly ground black pepper

Directions

Poach scallops and shrimp for 2 minutes in white wine & 1/2 cup lime juice.
Marinate scallops & shrimp in 1 c. lime juice, orange juice & green onions. Chill at least 4 hours.
Drain & discard marinade. Add remaining ingredients and serve on lettuce leaves in seashells.
