Cheddar Crackers


1 cup unsalted butter room temperature

2 cups extra sharp cheddar shredded

1 tsp kosher or coarse seasalt

1 tsp black pepper

2 cups flour

½ cup Rice Krispies

red pepper flakes optional


Makes a delicious appetizer.
Crackers are good also to serve with a small spoonful of strawberry jam.


With a mixer combine soft butter, sharp cheddar cheese, kosher salt and black pepper, until well combined. Add red pepper flakes if desired.

Mix in flour, and then (quickly and gently) add 1/2 cup Rice Krispie cereal.

Form into 2 or 3 logs (1 ½ inch-diameter) & roll each log in waxed paper.
Chill until quite firm, or freeze for later use.

Slice in 1/4 inch slices and bake at 350* on parchment-lined baking sheets until light gold - about 18 minutes.
