Cheese Grits


1/2 cup grits quick cooking

2 1/2 cups water

1 teaspoon salt

1 6-oz roll jalapeno or garlic cheese cubed

1 6-oz roll garlic cheese cubed

2 cups cheddar cheese grated

4 eggs beaten

1/4 teaspoon garlic powder optional


Stir grits into boiling, salted water. Cover & cook slowly till done. Add all cheese except 3/4 cup cheddar. Stir until melted. Blend small amount grits into beaten eggs and pour back into grits. Add garlic powder. Pour into greased 2-quart casserole. Sprinkle with remaining grated cheddar. Bake 30 minutes at 350 degrees.


Serving Ideas: Serve for brunch or as a side dish with BBQ or ham.
