light mayonnaise to hold all together
1 fresh lime or lemon juiced with peel
1/2 teaspoon Chipotle or Jalapeno Tobasco sauce
1 teaspoon ground cumin
3 cups grilled or smoked chicken or turkey cut in chunks
1 teaspoon Creole seasoning
5/8 cup chopped celery
2 tablespoons fresh cilantro chopped
1 red or sweet onion chopped
1 can corn kernels drained
1 can small sliced black olives drained
3/4 cup toasted pecans broken
Sprinkle the spices evenly over chicken. Add lemon juice & peel. Add veggies & toss. Stir in remaining ingredients, using just enough mayonnaise to hold it all together. Chill.
