Chili Roasted Potatoes



1 1/2 lbs small red potatoes quartered

extra virgin olive oil

1 1/2 tsps cumin

1 1/2 tsps chili powder

salt and pepper


Preheat oven to 375 degrees
Combine seasonings and a little olive oil in zip lok bag. Add potatoes, seal bag, and toss to coat all pieces. Refrigerate if desired. Spray nonstick baking sheet and spread out to a single layer. Roast 30-45 minutes, or until just tender.
