Coconut Ice Cream Dessert

2 cups crushed Rice Chex cereal

1 cup shredded coconut

1 cup finely chopped pecans

1 stick butter, melted

2/3 cup brown sugar

1/2 gallon box ice cream

maraschino cherries optional


Mix first 4 ingredients and put in a baking pan – bake at 250 degrees for 30 minutes
Last 5 minutes, stir in brown sugar. Cool.
Divide mixture in half.
Divide ice cream in half - press half in bottom of 9x13 baking dish (slice and layer ice cream, works better than trying to press the entire cube)
Layer: Ice Cream


Ice Cream

Freeze – cut into squares and put cherry on top.
