Coconut Pound Cake


2 cups sugar

1 teaspoon vanilla

2 cups flour

1 cup butter or margarine

6 eggs

1 teaspoon butter flavoring

1 teaspoon salt

1 can coconut flakes


1 cup sugar

1/2 cup water

2 tsps coconut flavoring


Cream sugar & butter. Add flavoring. Add eggs one at a time, mixing well. Sift flour & salt together & add slowly. Fold in coconut. Pour in greased & floured 10" tube pan. Bake at 325 degrees for about 1 hour 20 minutes. When cake is done remove from pan immediately. Brush sauce on cake while cake is warm.
Sauce: Mix sugar, water & coconut flavoring. Bring to boil & cook 1 minute.


Notes: Serve next day. Cake keeps one week.
