new potatoes, unpeeled
herbs of choice minced
Wash & microwave potatoes, first puncturing with a fork.
Preheat oven to 450 degrees.
Generously drizzle EVOO on a baking sheet. Place tender potatoes on the baking sheet, leaving plenty of room between potatoes. Using a potato masher, gently press down each potato until it is smashed. Drizzle each potato with EVOO. Sprinkle with Kosher salt, black pepper & fresh chopped chives, thyme or herb of choice.
Bake for 25-30 minutes until golden brown & crispy.
