Creamy Corn Polenta with Spicy Shrimp


2 cups chicken broth

1/2 cup yellow corn meal

chopped onion

chopped red bell pepper

1 can creamed corn

grated parmesan cheese

raw shrimp, peeled & deveined

Jamaican Jerk Seasoning


Green onions chopped


Simmer 2 cups chicken broth with 1/2 cup yellow cornmeal until smooth and creamy, stirring often (about 10 min).
Add a little chopped onion and red pepper.
Stir in 1 can creamed corn...cook 5 more minutes.
Top with grated parmesan cheese.

Lay on shrimp that have been dusted with a purchased Jamaican rub and sauteed in olive oil.
Finally, top with chopped green onion to serve.
