Cucumber Salad


1 cup white vinegar

1/4 cup sugar or Splenda

1 lg cucumber peeled, halved, seeded sliced thinly

1 sm red onion halved &

thinly sliced

1 lg carrot peeled & thinly sliced

1/2 red or green bell pepper julienned

1/4 teaspoon crushed red pepper maybe less


In a small saucepan heat vinegar and sugar for 5 minutes, or until sugar has dissolved. Cool completely. Put remaining ingredients in a bowl and add the vinegar mixture. Chill for 2 hours or longer before serving. It will keep in the refrigerator for 1 week.
