1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
extra virgin olive oil
2 (6-ounce) salmon fillets (about 1 inch thick), skinned
Combine first 4 ingredients in a small bowl. Rub fish lightly with oil. Sprinkle both sides of fish with spice mixture & pat in.
Heat a large nonstick skillet coated with cooking spray over medium heat, and add fish. Cook 6 minutes on each side or until fish flakes easily when tested with a fork.
