Curried Chicken Salad with Serenading Topping


2 1/2 cups cooked rice cooked with ginger in chcken stock

1 teaspoon coriander

1/2 teaspoon cumin

1/4 teaspoon mace

1/2 teaspoon dried red pepper flakes

1 teaspoon garlic

2 cups diced cooked chicken

1 cup green peas

1 cup celery chopped

1/4 cup green onions chopped

1/4 cup parsley

1/2 cup green pepper chopped

1/2 cup raisins any kind


1/2 cup mayonnaise

1/2 cup sour cream

2 tsps curry powder or to taste


1 sm pkg unsweetened coconut thawed & toasted

1 onion minced

2 cloves garlic minced

2 cups dry roasted peanuts

red pepper flakes to taste


Combine rice, coriander, cumin, mace, dried peppers and garlic. Then add chicken, peas, celery, green onions, parsley, green pepper and raisins. Mix and set aside.

Combine mayoonnaise, sour crem and curry powder and add to rice & chicken mixture.

Caramelize minced onion in a little olive oil. Combine with coconut, garlic, peanuts and pepper flakes. Add to salad mixture and store in airtight container in refrigerator.
