Curried Chicken Salad


2 cups cooked chicken breast diced

1 apple peeled & chopped

1 cup fresh pineapple diced

1/4 cup golden raisins

1/3 cup chopped dates

2 tbsps chutney chopped

1/2 teaspoon salt


2 tsps curry powder

2 tbsps chicken broth

1 cup mayonnaise


Simmer curry powder in broth for 2 minutes, stirring to a smooth paste. Cool. Add this paste to mayonnaise and mix. Combine all salad ingredients and mix in dressing 1 hour before serving.
