What to do with the leftover Chex cereals after you have made the original Chex Mix!
1. In small bowl, mix: (and set aside)
3 T. sugar
1 T. paprika
1 tsp. gr. chili powder
1 tsp. curry powder
1 tsp. gr. cumin
1 tsp. gr. coriander
1 tsp. gr. black pepper
1 tsp. salt
2. In large microwavable bowl, combine:
1/3 cup oil
1 cup assorted unsalted nuts (peanuts)
Microwave on high about 2 min. until fragrant.
Stir in until evenly coated:
3 cups Rice Chex
3 cups Corn Chex
3 cups Wheat Chex
1 cup miniature cheese crackers
1 cup miniature pretzels
3. Microwave uncovered on High 2 to 3 minutes, stirring every minute, until mix is thoroughlly heated. Spread on paper towels to cool. Store in airtight container.
The real trick is to have a microwaveable bowl big enough to hold everything. If you don't, you could mix it all in a roaster and then bake it like in the original recipe.(250 degrees, 1 hr.)
