East African Cabbage Salad


3 tbsps red wine vinegar

2 tbsps sugar

1/4 teaspoon salt

4 cups shredded cabbage

1 lg cucumber diced

1/4 cup red onion thinly sliced

1/2 cup chopped cilantro

1/4 cup salted peanuts coarsely chopped


In a large bowl, stir together the vinegar, sugar and salt until the sugar has dissolved. Add cilantro. Add remaining igredients and toss well. Cover and refrigerate at least one hour or up to overnight for the flavors to blend.
