Egg Breakfast Muffins

Brunch, Eggs, Muffins


1 1/3 cup cottage cheese

1 cup parmesan cheese

1/2 cup white whole wheat flour

1 1/3 cup almond meal

2 teaspoons baking powder

6 tablespoons water

8 eggs, beaten

crumbled bacon, green onion, green chiles - optional


Preheat oven to 400 degrees. Spray muffin tins with Pam.

Combine cottage cheese, Parmesan cheese, water & beaten eggs.
Combine flour, almond meal, salt & baking powder. Add optional ingredients, and combine all. Fill muffin cups and top with a bit of extra Parmesan, if desired. Bake 25-30 minutes, until muffins are firm & lightly browned.

Serve warm or room temperature.
