1 cucumber peeled, cubed, salted,rinsed
3 ripe tomatoes chopped
1 bunch scallions diced
1 green pepper chopped
1/4 cup fresh parsley minced
1/3 cup fresh mint chopped
3 tablespoons fresh cilantro chopped
1/4 cup lemon juice
1/3 cup olive oil
2 cloves garlic minced
salt and pepper
2 teaspoons sumac
2 pita bread loaves toasted
Tear pita bread into 1" pieces and toss with all other ingredients. Serve immediately.
