Feijoada - The Easy Way


3 cans black beans undrained

2 cups water (or broth)

1 lb. ham cubes 3/4 inch cubes

1 lb. pork loin 3/4 inch cubes

3/4 lbs. Italian sausage links cut in 1" pieces

1 can Rotel tomatoes

1 onion chopped

1 teaspoon red pepper flakes

6 garlic cloves minced

1 teaspoon orange zest


Brown meat and onions. Combine with all remaining ingredients in crockpot. May add more beans. Cook for 6-8 hours. Skim fat or refrigerate & remove fat when cold. Excellent if chilled and reheated slowly the next day.

May garnish with orange slices, chopped green onions or chopped fresh cilantro.


Serving Ideas: Serve over rice with hard rolls and fresh fruit.
