Fiesta Egg Casserole


10 eggs beaten

2 cups monterey jack cheese grated

2 cups cheddar cheese grated

2 cups small curd cottage cheese

8 ozs chopped green chiles

1/2 cup butter melted

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup flour


Preheat oven to 350 degrees. Spray 9x13 baking dish with Pam. Stir 1st 4 or 5 ingredients together. (May do this the night before and refrigerate overnight.) Mix in dry ingredients; mix in melted butter and pour into prepared dish. Bake until edges are golden brown and the center is set, about 45 minutes. (Will puff like a souffle, but expect it to fall in a few minutes.) Serve with fresh salsa.
