1 pound hot Jimmy Dean sausage
1 pound regular Jimmy Dean sausage
2 cloves garlic minced
2 T dried basil
4 (16-oz) cans diced tomatoes, undrained (DelMonte w/basil, garlic & oregano)
2 (12-oz) can tomato paste
8 ounces lasagna noodles
16 ounces Ricotta cheese
1/2 cup grated Parmesan
2 T parsley flakes
1 tsp salt
1/2 tsp black pepper

Brown meat and spoon off fat. Add next 5 ingredients. Simmer uncovered 30 minutes, stirring occasionally.
Cook noodles until tender, rinse & drain.
Beat eggs and add Ricotta, Parmesan, parsley, salt & pepper. Mix well.
Lightly grease a 9x13 baking dish with Pam. Spread a small amount of sauce in bottom of dish – very sparsely. Layer half the:
- Ricotta filling
- Meat Sauce
Bake covered at 350 degrees 45-60 minutes. Remove foil last 10-15 minutes. Bake until bubbly and top is beginning to brown. Let stand 10 minutes before serving.
If making ahead, freeze before baking. Cover with aluminum foil and seal well. (I use saran wrap before the foil, especially if it will be awhile before baking – just be sure to remove it!!) To bake, defrost and bake in 350 degree oven for 1-1½ hours, until bubbly and top is beginning to brown. Let stand 10 minutes before serving.
