Flavors of Fall Salad


3 lg crisp apples thinly sliced

1/3 cup Maytag blue cheese crumbles

1/4 cup pecan pieces toasted

1 head Romaine lettuce

1 bag baby spinach leaves

Kosher salt to taste

black pepper to taste

nutmeg freshly grated to taste

Vinaigrette dressing for "Flavors of Fall"


Combine apple slices with 3 tbsp vinaigrette. Cover and refrigerate for up to 4 hours.

To serve, toss all ingredients, including apples. Top with vinaigrette dressing and season to taste.

1 tbsp Dijon mustard
1/4 c wine vinegar
1/2 tsp dill weed
1/2 tsp nutmeg freshly grated
1/8 tsp Kosher salt
1/8 tsp black pepper freshly ground
1/2 c extra virgin olive oil

Combine all except olive oil. Add oil very slowly, whisking constantly. Stir vigorously before using. Vinaigrette may be prepared up to 3 days in advance.
