Garden of Eatin'


6 red potatoes cubed

3 cups button mushrooms

2 med carrots peeled & chopped

2 med zucchini cubed

1 med red onion cut into rings

1 lg red bell pepper cut into chunks

1 lg yellow bell pepper cut into chunks

2 cloves garlic minced

1 tablespoon olive oil

1 tablespoon oregano

1 tablespoon rosemary

1 tablespoon balsamic vinegar

1/4 teaspoon salt and pepper

1/2 cup feta cheese crumbled


Preheat oven to 425 degrees. Place oil, herbs, garlic, potatoes, mushrooms, carrots, zucchini, onion & peppers in zip lok bag and toss to mix well. Spray a large roasting pan with Pam. Add veggie mixture from bag. Roast, uncovered, for about 30 minutes. Stir once or twice during cooking time. Turn on broiler and broil veggies for about 5 minutes, until edges start to brown.

Remove veggies from oven and transfer to serving bowl. Toss with vinegar and salt & pepper. Sprinkle crumbled feta over top. Serve warm.
