10 fresh garlic scapes
1/2 cup grated parmesan cheese
1/2 cup toasted pistachios
pinch kosher or coarse seasalt
fresh basil leaves optional
1/2 cup EVOO possibly more
Add to hot pasta or hot smashed potatoes. Toss potato chunks in pesto before roasting. Spread on pizza crust or use for garlic bread.
Chop garlic scopes. Place in food processor with cheese & nuts. Add fresh basil leaves if desired. Pulse until finely chopped. Drizzle in olive oil in a slow stream while processing. Add oil to desired consistency. Taste & season with salt.
If milder garlic flavor is desired, may add softened cream cheese or heavy cream.
