Green Beans with Tomato & Artichokes


1 1/2 lbs green beans trimmed

2 tbsps extra virgin olive oil

2 cloves lg garlic thinly sliced

1/2 cup marinated artichoke hearts drained and chopped

2 plum tomatoes diced

1/2 teaspoon salt

pepper to taste


The beans can be cooked ahead, cooled & refrigerated. When ready to serve, warm them in the microwave and toss with dressing.
Bring a large pan, 2/3 filled with water, to a boil. Add beans & cook 6 minutes until tender-crisp and still bright green. Drain & rinse briefly under cold water.
Place oil and garlic in a small microwave-safe dish. Cook on low 30 seconds until garlic begins to color. Toss with beans, artichokes, tomato and salt. Serve warm.
