1 cup honey
2 teaspoons lemon zest finely shredded
1/4 teaspoon salt
1 cup all-purpose flour
1 teaspoon baking powder
8 ounces chopped dates
1 cup chopped pecans
Preheat oven to 325 degrees. Grease 9"x13" pan and line bottom with waxed paper.
Beat eggs till foamy. Add honey, lemon zest and salt, mixing well. Mix flour and baking powder, and add with dates and nuts to the egg mixture. Mix well. Spread batter evenly in pan and bake about 40 minutes. Let stand a few minutes, then loosen edges with a knife. Turn out on board and remove paper. Cool. Wrap in foil, and let ripen in cool place for several days.
Cut lengthwise in 1/2" strips, then across times.
