1 lb ground beef or turkey
1 pkg taco seasoning mix
2 (8oz) pkg Neufchatel cheese softened & sliced
8 ozs salsa thick & chunky
1 1/2 cups grated cheese jack or mild cheddar
Make taco filling with meat & taco seasonings as directed on package in microwave or on stovetop. Cool a bit & spread half in bottom of pyrex pie plate or other shallow microwave dish. Spread evenly with half the softened cream cheese, salsa and grated cheese. Repeat layers, ending with grated cheese. Cover & refrigerate till serving time.
Remove cover and heat in microwave till cheese is melted and dip is hot in the center of the dish. Dip with tortilla chips.
Leftovers may be rolled in corn or flour tortillas and heated in microwave. If all the recipe is used as enchilada filling, top with canned mild red enchilada sauce and sprinkle with a little more grated cheese before baking or microwaving.
Serving Ideas: May add well-drained beans or refried beans.
