Indian Roasted Cauliflower (Peela Gobi)


1 head cauliflower, broken in bite size pieces

1/4 cup vegetable oil

1 teaspoon turmeric

1 teaspoon salt

1/2 teaspoon cayenne

1/2 teaspoon ground cumin

1/2 teaspoon mustard seeds


Preheat oven to 400º.

In a small saucepan, heat oil and spices over medium heat for about 3-4 minutes, until garlic is fragrant and spices begin to blend into the oil.

Toss cauliflower with the oil and spices and then arrange in a single layer on a baking sheet. Bake at 400º for about 10-15 minutes, or desired degree of tenderness.
