Italian Potato Salad


small red or gold potatoes

extra virgin olive oil

lemon EVOO

fresh basil finely chopped

fresh Italian parsley finely chopped

Kosher salt

black pepper


Wash and cut potatoes into 1" cubes. Steam till tender. Place in serving bowl and drizzle with plenty of olive oil. Toss until all pieces are covered. Toss in generous amounts of basil and Italian parsley, salt and pepper. Add more oil if needed. Toss again and let stand at room temperature until serving. If made in advance, warm to room temperature to serve.

May add chunks of roasted sausages for a main dish.
