1 1/2 lbs pork loin trimmed & cut in 1/2" cubes
1 cup onion coarsely chopped
1/4 cup soy sauce
2 tbsps brown sugar
1 tablespoon fresh lemon juice
1 teaspoon ground coriander
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon ground cumin
In a food processor or blender, puree marinade ingredients until blended & smooth. Marinate the pork cubes at room temperature about 1 hour. Refrigerate if marinating longer.
Thread pork on skewers. Grill over hot coals 5 minutes on each side, or until meat is brown and begins to crisp.
Serving Ideas: Serve with pilaf, fresh asparagus and fresh fruit
