Lebanese Tabouli (Tabbouleh)


3 bunches Italian parsley

1 bunch green onions

1 bunch fresh mint

6 tomatoes

5 lemons

3 cups bulgar wheat


salt & freshly ground pepper


Soak bulgar in warm water until soft.

Finely chop the greens.
Cut tomatoes and add all to the bowl of bulgar.

Juice the lemons and pour over the salad. Cover with EVOO. Add salt & pepper to taste.
