Lemon Garlic Baked Cod


2 lbs Alaskan Cod Fillets

1/2 cup sour cream

1 tsp lemon zest

1 tsp minced garlic

1 Tbs fresh parsley minced

1/4 tsp salt

1/4 tsp black pepper

1/4 cup seasoned croutons finely crushed


Preheat oven to 425.

In a bowl stir together sour cream, zest, garlic, parsley, salt and pepper.

Spread the mixture over the cod fillets. Place fillets on a baking sheet, lined with parchment paper.

Press crumbs on the tops of fillets.
(If panko topping is desired, stir together panko and 1 Tbsp melted butter.)

Bake 425 for 10-12 minutes.
