Lemon Pilaf with Almonds


2 tbsps minced onion

3 tbsps butter divided

1 1/2 cups long-grain rice

2 1/2 cups well-seasoned chicken broth

2 tsps chicken broth paste

1/3 cup fresh lemon juice

zest of 1 lemon

2 tbsps golden raisins, chopped

1/4 cup slivered almonds, lightly toasted

chopped fresh parsley


Place 1 Tbs butter and onion in rice cooker, turn on and saute till onion is clear. Add rice and stir till all grains are coated with butter. Stir in broth, chicken broth paste, lemon juice, zest and golden raisins. Cook until done. Stir in remaining butter, toasted almonds and chopped fresh parsley just before serving


Serving Ideas: Delicious with grilled lamb chops & fresh asparagus.
