Lemon-Ginger Grilled Chicken

Ingredients

4 tablespoons lemon zest

2/3 cup lemon juice

4 teaspoons minced ginger

4 teaspoons brown sugar

1 tablespoon peanut oil

1 teaspoon salt or to taste

4 teaspoons crushed red pepper

3 lbs. chicken thighs skinless & boneless

Directions

Combine all but chicken thighs in a large ziplok bag. Add the chicken, squeeze out the air, and seal the bag. Refrigerate, turning occasionally, at least 1 hour.
Lightly coat the chicken and grill with oil. Preheat grill. Grill chicken until cooked through, about 6 minutes per side.
