Lime Rice & Beans


1 cup medium grain white rice

2 cups water or broth

1 lime juice & grated peel

2 tablespoons extra virgin olive oil

6 cloves large garlic minced

1/2 teaspoon salt

1/4 cup chopped fresh cilantro

1/4 cup chopped fresh parsley

1 tomato diced

1 can pinto or black beans drained

1/2 cup shredded cheddar cheese


Heat oil in large saucepan over medium heat. Add garlic & saute for one minute. Add rice and stir for 2 more minutes. Add water/broth and salt; bring to a boil. Reduce heat to low and cover. Cook about 15 minutes then add beans. Simmer about 5 more minutes, or till rice is tender and beans are hot; then let stand covered for 5 minutes. Add cilantro, parsley, tomato & lime peel and juice. Stir. Transfer to serving dish and top with grated cheese.
