Parmesan cheese shredded
Slice eggplant lengthwise or in rounds. Lightly spread each slice with mayonnaise and place, mayo side down, on sprayed cookie sheet. Lightly spread mayonnaise over tops, and sprinkle with a little garlic powder. Bake at 450 degrees on bottom rack of oven for 20 minutes, or till golden brown.
Cool and use in recipe, or chill, freeze on cookie sheet, and store in freezer in ziplock bag until ready to use in recipe.
Notes: Serve as a side dish or in Eggplant Parmesan or other dishes that call for fried eggplant.
