Marinated Cherry Tomato Salad


1 pint red grape tomatoes

1 pint yellow grape tomatoes

1/2 red onion thinly sliced

1/4 cup olive oil

3 Tbsp balsamic vinegar

2 Tbsp fresh parsley minced

1 Tbsp pesto

1/4 tsp sugar

1 clove garlic pressed

salt & pepper


Halve tomatoes. Add to large zip bag with red onions. Add oil, vinegar parsley, sugar, pesto, sugar, garlic & sprinkle w/ salt & pepper. Seal bag, getting out all air. Place in fridge until ready to serve. Serve on lettuce leaf if desired.
